Absolutely watch and react to the Itachi arc! It's actually an animated adaptation of the Itachi's Story novels, which delve deeper into what Itachi went through leading up to the Uchiha Clan massacre.

This arc in particular is beautifully animated, too. It would be a crime to skip it.
