Eren might feel annoying hut he's a very realistically human character. Imagine someone taking you most precious thing away that meant the world to you. You'll always be raging at them. Same is for eren. He actually develops slowly as the scouts discover the truths. If you notice he's very different now from how he was in s1. Yes he's still a loudmouth but he's also calm over things and looks at a bigger picture. He'll keep developing as the scouts keep uncovering the mysteries because he'll understand how naive he used to be

They kept the syringe soo they could save someone with it by having them eat a titan shifter. Like Annie, Reiner, or Bertholdt

You should watch Re:Zero its a fairly popular anime and in my opinion I think you would like it, and yes they do have a dub its on Crunchyroll

MIkasa and Erens relationship is a bit complicated. Yes it may seem annoying but imagine losing your parents and your other family who took care of you and one member was only left. of course you wouldn't want to lose him in the world of attack on titan. Eren means everything to Mikasa you might need to watch the OVA to understand more about them.
If you actually look closely at Eren's character, you can see him slowly start to develop. So far, he went from an absolute loudmouth who rages over everything in season one, to a more calm and level-headed person. His character is going through a lot right now, especially after finding out he ate his father.
I never really understood why they showed that specific after-credits scene. It just misses all the context and doesn't really add any hype but made me just confused, to be honest.

thats a you problem then, its supposed to make you wonder what happens in the 2nd part. it's hype, and a majority agree.
The whole point of that mid-credit scene was to keep the hype going for the second cour. Remember, people had to wait 6 months for the next part back when this aired. Also, that mid-credit scene was supposed to be "out of context." Otherwise, it would literally spoil future events. It's just a little easter egg to keep the hype going.

Short info regarding the release of season 4 episodes: They split the season into two parts, part 1 finished a few days ago (with episode 16) and the next episodes are going to be broadcast at the start of 2022
