She would literally NEVER catch up to One Piece. Even if she managed to release a single episode a day, it'd take her almost three years to catch up. At her normal release of two/three days it would be...much longer. I adore Suzy's reactions mind you, not hating but a series THAT long would be very demanding of her to be well..timely at all.
Eagerly awaiting the SAO Progressive movie. I look forward to seeing your reaction to it when it gets its inevitable English dub.
Also last note, I'm fairly confident that it was Kaiyaba who sent the IP Address to Kirito. Whenever anything mysterious happens in this show it usually has something to do with him.

CONGRATS AGAIN for finishing the animated SAO saga!!!! It's quite the journey and am glad to experience it with a reactor on youtube. Seeing it through your eyes is like reliving the first time. Something you can't really do IRL. Sadly. :)
I've said it before, but still hoping you watch the Yui and the gang filler story. I love anything with Yui.
I know you picked up SAO Light Novel 1. But I think you might enjoy starting at SAO Light Novel 19 more. That continues where the anime just ended. It's a two part story finishing in SAO LN 20. It's a bit of a filler story. It's meant to explain what Underworld is like after the war.
